Many of my clients ask me about eggs and whether they can be part of a healthy diet. An egg is such a simple, basic food that most of us keep a carton of in the fridge, yet eggs stir up a lot of commotion. Over the years there have been mixed opinions about how often eggs should be eaten. Are they too high in cholesterol? Maybe we should only eat egg whites and discard the yolk? Does the yolk have any benefits?

  3. I used to be a big fan… but since last April I get really sick and can’t eat eggs anymore.

      Oh no! That’s not good. Did you get tested for allergies? If you are allergic to eggs you need to be very careful because they are in many baked goods and other foods. Good luck!

    I love eggs poached! People are sometimes scared to try making them, but I offer some tips here:

  5. Love eggs, and especially the yolk. Hard cooked eggs are a great do ahead, then grab and go snack. But really I like eggs everyway.

  6. I’m so happy that eggs are getting better nutrition press lately. They are such a wonderfully versatile source of (delicious) protein. It’s said that the origin of the pleats in the chefs toque (hat) are to illustrate how many ways (s)he can prepare eggs. Pretty impressive!!

  7. Oh my goodness, I am completely obsessed with eggs these days… and the fact that I buy eggs with 660 mg of omega-3s per egg makes me love them even more! ha ha. I have been eating them every single day for the past 2 months and just can’t stop! If you’ve never tried them with cilantro & paprika, you must! Out of this world good! 🙂
